SPOKANE, Wash. - John Houlihan has been making kettle corn for the past 5 years. His dad started the business about 8 years ago. Even though John Sr. past away last summer, John and his brother Jim carry on the family tradition of making popcorn taste not so traditionally. They make beer flavored popcorn, Hawaiian Delight, and their specialty, Sweet and Spicy. You can find O'houli's Kettle Corn at the Coeur d'Alene Farmer's Market, or you can make your own! Here is their at-home recipe.
Kettle Corn ¼ cup of canola oil, or vegetable oil ½ cup of unpopped corn ¼ cup of white sugar In a large deep pot, heat oil on medium high. Add a couple kernels. When the few kernels have popped, add the rest. Once the kernels have started to pop, add sugar. Stir with wooden spoon. Put a lid on the pot and make sure to keep it moving. When the kernels slow down, take off of the burner and pour into a bowl. Note—If you would like to make a more caramel version, use a ¼ cup of brown sugar. Make sure to keep a CLOSE eye on it. Brown sugar burns much easier.
