Chef Brian Hodges' Infused Olive Oil

Ingredients
2-3 tablespoons smoked paprika
2 cups olive oil
1) In a medium pot, add paprika over medium-high heat. Stir frequently to prevent burning, but a little smoke is good!
2) Once the paprika turns a bright red and becomes aromatic, add olive oil and stir to incorporate.
3) Add a little salt and pepper and stir.
4) Using a coffee filter (or a wire strainer if you have one) SLOWLY pour oil through filter and into a bowl.
This recipe works with all spices! Get creative and try it out! I tried it using a blend of Indian spices (turmeric, curry and garam masala) and it took grilled chicken to another level!
This infused olive oil adds a kick to chicken, fish and adds depth to salad! If you have a squirt bottle (can buy them at kitchen supply stores for $1) you can get artsy and make your plates look professional and impress your friends!
