Balsamic Reduction

Yield: 8 oz

8 oz Balsamic Vinegar

8 oz Red Wine Vinegar

2 oz Brown Sugar

Heat gently until steam is coming off surface. Do not boil or simmer. Boiling or simmering burns the sugars in the vinegar and gives the reduction a bitter taste. Reduce to a syrup consistency.

Spinach and Artichoke Dip

Yield: about 18 oz.

16 oz Cream Cheese

2/3 Cups Mayo

4 Garlic Cloves Whole

1/8 Cup Shredded Parmesan

3 oz Spinach

1/3 Cup Artichoke Hearts

1 tsp Salt

½ tsp Black Pepper

Preheat oven to 375. Sautee spinach, dry with paper towels, and let cool. Make sure it is very dry or the dip will be very watery. Add all of the ingredients to the food processor and blend well scraping the sides to incorporate all ingredients. Fill oven safe dish. Top with more shredded parmesan if desired. Put oven safe dish on a sheet pan to catch any drippings. Place in oven for 20-30 minutes or until the top starts to get a nice golden crust. Serve with sliced baguette.

Notes: This recipe is very strong on the garlic flavor. If desired, reduce the amount of garlic or go nuts and add more!

Caprese Skewers

Yield: 8 oz

32 Cherry Tomatoes

32 Fresh Mozzarella Balls

@ 3 oz Balsamic reduction

4 oz Fresh Basil

Cut basil down to the size you want or use whole leaves if they are small enough. Start assembling the skewers by placing cherry tomato concave side down on cutting board. Hold the mozzarella on top of the tomato. Add a dot of balsamic reduction to the top of the mozzarella. Place the basil on top of the balsamic reduction. Push the skewer down the caprese and voila! Make sure you mess up a few and eat them because you don’t want them to go to waste.
