3-4 slices bacon, chopped
1 avocado, sliced
Small handful of lettuce
1 tomato, sliced
2 slices of sourdough bread
1) In order to get the CRISPIEST bacon ditch the pan and use your oven instead! Line a backing sheet with foil and space the bacon out evenly on the pan. Here's the key: put the tray lined with bacon into a COLD oven and then turn on the heat to 400°. Bake for about 15-20 minutes until you reach your desired crispiness, and transfer to a plate or tray lined with paper towels to drain the grease.
2) Toast your bread and line the bottom piece with the avocado (you can use mayo too but the avocado provides creaminess without the added calories). Next, the bacon, tomato and finally the lettuce. If you want to compress the sandwich to make it easier to hold, use a brick wrapped in foil or even a heavy saute pan.
As always, adding a little sriracha hot sauce to this sandwich will balance out the salty and creamy flavors from the bacon and avocado (and also provide a sweet, spicy kick)!
