Southern Pulled Pork Sandwich

Ingredients 5-7 lb. pork shoulder (also called Boston Butt) Pork dry rub Torta roll BBQ Sauce Cheese of choice (provolone works really well here!) Dill pickle slices Lettuce 1 tomato, sliced 1/2 red onion, sliced
1) Rub the dry rub onto the pork shoulder and let marinate for an hour or even overnight. 2) Preheat the oven to 300°. 3) Place the pork into a roasting pan and roast for 6 hours or until an instant read thermometer says 170°. 4) Remove the pork from the oven and let it rest for about 10-15 minutes. 5) Using two forks, shred the pork off of the roast and mix in your favorite BBQ sauce. 6) Assemble the sandwich with the pork on the bottom, followed by the cheese, lettuce, tomato, red onion and the dill pickles to top it off!
If you have a smoker, smoke the pork for about 4-6 hours before roasting it to ensure that it cooks all the way through. An instant-read thermometer is very helpful for making this and they're not too expensive either!
