Mike's Local Gourmet: Greek Pasta

NBCRightNow.com - Here's the recipe for Chef Brian Hodge's Greek Pasta!

1/2 cup mizithra cheese, grated
4 tablespoons butter
6 ounces chicken stock
1/2 lb spaghetti, cooked "Al dente"
Black pepper and salt to taste

1) Cook pasta until "Al dente" and set aside.
2) In a medium saucepan, melt butter over medium-high heat, stirring constantly, until the color starts to turn slightly brown.
3) Add spaghetti to the butter and toss well.
4) Add the cheese into the pasta and stir (don't expect the cheese to melt fully, it's a drier cheese).
5) Serve with more black pepper and cheese on top!

This dish functions well as a main or as a side to a meat (especially lamb) and works with any variety of pasta.  If you're cooking for a picky eater, this dish is perfect to try because the cheese is very mild, even more so than a Parmesan cheese!
