Ingredients (makes 2 sandwiches) 10 stalks of asparagus, washed & bottoms trimmed 1 cucumber, sliced 1 medium heirloom tomato, sliced 4 slices of fresh mozzarella cheese 1 tablespoon Herbs de Provence (blend of spices) 4 slices of thick pumpernickel bread 2 handfuls of mixed greens Pesto mayonnaise (50% pesto, 50% mayo) Salt and pepper to taste Butter
1) In a saute pan, melt butter over medium-high heat. Add asparagus and toss, add herbs and cook for until tender but still crunchy (about 5 minutes). Add the salt and pepper toward the end.
2) Toss the mixed greens with either your favorite salad dressing or make your own vinaigrette (mix olive oil and either vinegar or fresh citrus juice).
3) Toast the bread on both sides and spread the pesto mayo on each slice. Next, layer on the cheese, tomatoes, cucumber, asparagus (about 5 stalks per sandwich) and the mixed greens at the top. Use a toothpick or a kitchen skewer to hold in place.
Heirloom tomatoes are VERY distinct from other tomatoes at the supermarket. Not only do they comes in a variety of colors but some even have zebra-like stripes on them. Try all of the colors to see which one you like! As far as the sandwich goes,
