Mike's Local Gourmet: Spiced Spanish Almonds

NBCRightNow.com - Here's the recipe for Chef Brian Hodges' spiced spanish almonds!

1 pound raw whole almonds, about 3 cups
1/4 teaspoon chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon black pepper
1 tablespoon extra virgin olive oil
1 teaspoon garlic powder
1 teaspoon salt

1) Preheat oven to 350°. Over medium-low heat, toast almonds for 1-2 minutes.  Add olive oil and toss to coat the almonds.

2) Add in the spices one by one (add the salt last so you don't end up with too much for your taste) and stir to coat the nuts.

3) On a baking sheet lined with parchment paper or aluminum foil, bake for 20-25 minutes (tossing every 10 minutes).  Let cool for about 15 minutes.

This dish is great with either wine/beer or as a small plate to snack on before a meal with company!  Feel free to try using your favorite spices if you want to!
