Mike's Local Gourmet: How to Make Vinaigrette Dressing

Ingredients 1 cup red wine vinegar 2 cups extra-virgin olive oil 2 garlic cloves 1 shallot 2 teaspoons salt 2 teaspoons pepper 1 tablespoon Herbs de Provence
1) In a blender, add the vinegar, shallot, garlic, pepper and herbs and blend whilst slowly adding in the olive oil. 2) Add salt at the end of blending to match your taste.
THAT'S IT! Couldn't be simpler! The best part? Once you've made this base, you can add almost anything to it to make the vinaigrette uniquely yours! Red pepper flakes for some extra heat, parmesan cheese for creaminess or even bacon....YUM!
