NBCRightNow.com - Here is Chef Brian Hodges' recipe for his Vegetarian Quinoa Wrap!Ingredients (makes 2 wraps)
1 cup cooked quinoa
2 large flour tortilla
1/2 cup of your favorite salad dressing
1/2 tomato, diced
1/2 small red onion, diced
2 cups mixed greens
1/2 cup feta cheese (about a handful for each wrap)
Guacamole to spread
1) In a medium mixing bowl, mix the greens, quinoa and dressing together. Add the tomato, onion and feta and mix again.
2) Instead of mayonnaise, spread guacamole as your base and top with the veggie and quinoa mixture.
3) Fold over the tortilla and tuck it back towards you. Next, fold up the sides and finish rolling.
