Mike's Local Gourmet: Smoked Chicken & Bacon Pasta

NBCRightNow.com - Here is the recipe for Chef Brian Hodges' Smoked Chicken and Bacon Pasta!


4 ounces smoked chicken, shredded

1/2 pound cooked pasta (penne works well)

4 ounces heavy cream

4 ounces tomato sauce

4 ounces chicken stock

2 ounces diced tomatoes

6 slices of bacon, crumbled

1 tablespoon Herbs de Provence

Handful of spinach

2 cloves of garlic, minced

Parmesan cheese

Pepper to taste

1) Cook pasta "al dente" and set aside.

2) Heat olive oil over high heat in a medium saucepan and add in bacon and chicken; cook for 1 minute.  Add garlic and cook for another minute.

3) Add in pasta and chicken stock and reduce for about 3 minutes.  Next, add the tomato sauce and heavy cream and reduce for another 3-5 minutes.

4) Sprinkle pepper and herbs over the pasta and stir. Add diced tomatoes and spinach and cook for another 3 minutes and remove from heat to prevent the spinach from wilting.
