Back to school healthy lunches

YAKIMA, WA- Kids are heading back to school and its time to start packing lunches again.  La Maison Cooking School in Yakima has some great tips for creating healthy easy back to school lunches. Chef Jillian Patterson tell us making school lunches doesn't need to be hard. Sauces and dips are great ways to get your kids to eat healthy vegetables and fruits. Using cookie cutters to make creative shapes out of your kid's favorite meats and cheese is a fun way to surprise them in their lunch. 

Jillian's Easy Back to School Recipes:

Turkey cucumber “sushi” wrap

  • 1 10” tortilla wrap
  • 1 tbsp cream cheese spread
  • 1/2 cucumber cut into 1/4” long strips
  • 4 slices of turkey meat
  • Salt and pepper

1. Lay out tortilla on cutting board

2. Evenly spread cream cheese over entire tortilla surface 3. Lay out each slice evenly across the entire tortilla 4. Lay out cucumbers in the center of the tortilla reaching from one end to the other 5. With the cucumbers parallel to you, start rolling, making sure to tightly roll the tortilla.

6. Cut tortilla roll into 1” circles and serve

Funtastic pasta salad

  • 2 cups dried veggie pasta
  • 1 cup broccoli
  • 1 cup diced ham, or other meat
  • 1/2 cup cubed cheese, any type your kids like
  • 1/4 cup ranch dressing, substitute with your favorite dressing
  • 1 tsp basic seasoning salt

1. In a medium pot boil pasta as directed on box. In the last 2 minutes of cooking pasta, add broccoli.

2. Once pasta is done, rinse and chill

3. Once chilled add remaining ingredients and stir well.

4. Season to taste.

Pasta salad will keep for 4-5 days refrigerated. To make cooking pasta easy, you can easily make several days in advanced and just freeze the pasta in individual portions. When you need to use, just thaw and mix in your favorite veggies and meats.

Peanut butter dip

  • 1/4 cup peanut butter
  • 1 tbsp honey
  • 1/2 tsp cinnamon
  • 1 tbsp water

1. Mix peanut butter and honey together

2. Add cinnamon and water and mix well

 Serve with sliced apples or bananas
