Halloween Howl Workout & Jenny Anchondo's Healthy Pumpkin Recipes

KENNEWICK, Wash - The Tri City Court Club is holding a "Holiday Howl Workout" benefiting the Union Gospel Mission.

The workout will cover all major fitness components:  Cardio, strength and stretching.  All exercises will have a Halloween theme.

The event is open to the community and free with the donation of a jacket or two cans food for the Union Gospel Mission.

The "Holiday Howl Workout" is at the Tri City Court Club at 10 a.m. and 6 p.m. Monday, October 30th.

Jenny Anchondo's  Low Fat Pumpkin Bread

Makes 3 loaves or 2+ dozen muffins

5 C whole-wheat flour  

4 tsp baking soda 1 tsp salt                        

2 tsp cinnamon                   

1 ttsp cloves (or, instead of these spices, you can just use pumpkin pie spice)              

4 C sugar (It also works with artificial sweeteners)

Mix dry ingredients together

1 lg. can pumpkin

1 tsp vanilla

1 cup nuts (optional)                                              

1 cup applesauce

½ cup egg beaters or three egg whites

Mix wet ingredients

Mix wet and dry ingredients together

Bake in a greased pan at 350 degrees for 1 hr. 20 min. for bread

Cook about 25 to 30 min. for muffins


Jenny Anchondo's Low Fat Pumpkin Pancakes

Makes 4-5 large pancakes, or several smaller pancakes

2 cups ground oats (You can buy them in bulk or grind them in a blender)

1 ½ tbs pumpkin pie spice

8 packets of Stevia or artificial sweetener, or sugar.

1 tsp salt

Mix dry ingredients

2 cups egg beaters

¾ cup pumpkin

1 tbs. olive oil

½ cup water

Mix wet ingredients together

Mix wet and dry ingredients together

Spray skillet with non-stick cooking spray and cook until slightly brown.

Top with sugar free syrup or eat alone!  Happy Holidays!
